This is a simple dessert that would be perfect for Valentines Day.
Why not beat the crowds and stay at home, all snug as a bug and enjoy this delicious treat?
You could substitute Rose Water for the Rosé Wine, but i thought seems it is Vallie’s Day why the hell not?
They take around five minutes to make, and then you just pop them in the fridge for two hours.
(I recommend whipping them up the night before.)
You could serve alone, or with some heart shaped biscuits.
Rose & Raspberry Posset Recipe
- 175ml Rosé Wine
- 100g frozen rasberries
- 100g low-fat creme freiche
- 75g low-sugar
- Add creme freiche, Rosé wine, raspberries and sugar to a blender and blend till smooth.
- Pour the mixture into ramekins, and refrigerate for 2-24 hours.
- Take out of fridge.
- Sprinkle some frozen raspberry and pink sprinkles over.
- Tuck in.
The Rosé Wine and raspberries work beautifully alongside the creamy creme freiche and sugar.
I use Silver Spoon Half Sugar, as it has half the calories and you genuinely can’t tell the difference.
You can make these all year round adding any fruit. Lemon is my all time favourite, with a cheeky shortbread biscuit.
