So today’s foodie post is a little different. It features the M&S Jerk Spatchcock Chicken. I rarely ever buy pre-made foods, but this baby caught my eye, and at £7 i thought it was a total bargain.
I had a busy weekend and i knew i didn’t really feel, or would have the time to be cooking up a storm, so i popped this in my trolley.
Well i am a gonna tell you now, I am so glad i did.
I simply removed the chicken from the packaging, and popped onto a large oven tray, and roasted for 90 minutes on 160°C, gas mark 3.
I roasted some butternut squash in olive oil, and salt and pepper for the same amount of time. The chicken was on the top shelf, and the squash was on the very bottom shelf.
The chicken had been partly deboned, and coated in a jerk marinade with lime, rum, ginger, chilli and spices
The smell was amazing. It totally engulfed my whole house.
I served with some peas, rocket and M&S coleslaw.
Simple fresh side dishes, to compliment the feisty, and flavoursome chicken.
The chicken was tender, moist and unbelievably tasty. It was actually exceptional. Restaurant quality, but at home.
I highly recommend if you don’t have the time to cook, or simply don’t like cooking then you need to try this Jamaican Jerk Spatchcock Chicken. (Veggies excluded of course).
For the people who don’t like spicy food, there is also a garlic and herb one in the range.
I know not everyone who reads my food posts likes to cook.
